So, it's in the 90s and summertime and
I'm over here dreaming of fall. Ok actually what happened is, I delegated the
rice making to one of the kids we were to have a cold rice salad, buttttt said
child added too much water and the rice was mush. However, I was dreaming
of this chai spice rice pudding so win-win for me! When I learned that I
would need to eliminate gluten and dairy from my diet I mourned the loss of
desserts. The first thing I tried to make dairy free was my rice pudding.
I'm happy to say it was a success! So today when the rice mush and my chai
spice came in, I had to try!

my Chai Rice Pudding: 2C cooked and
cooled white rice (mushy works) 11/3c Milk of choice, I used
almond1/8 tsp salt1Tsp Java Momma Chai Spice4 Tbsp white sugar 1 Tbsp coconut
oil 3 eggs 1 tsp vanilla. Pre-heat oven to 325* Whip eggs with vanilla,
sugar chai spice, salt, coconut oil and almond milk. Add the egg mixture to the
rice and mix well. Spray a 9x11 baking dish with cooking spray and add the
rice mixture. Bake uncovered for 45minutes-1 hour until the pudding is set.
How
do you feel about raisins?
My
crew will mutiny if they're in the dish! They aren't bad though!
