Coffee for When Your Coffee Needs a Coffee

 


The toddler wouldn't settle until o' dark 30. You were up working on a paper or had to finish that project. Maybe your brain just wouldn't shut off!  Monday. Whatever the reason, your coffee needs a coffee, here's a fun way to add a little more hug to your mug.  This will probably last a couple weeks in the fridge.  I have also slipped this onto my cold brew gelato for fun...

Without further ado... 

Here's my simple coffee syrup recipe:

Ingredients:

1cup brewed coffee (unflavored is best if you're mixing and matching coffees)

1 cup sugar

1 dash vanilla

*optional - dash of salt (forgot that in the graphic)

☀️Combine the sugar and coffee on the stovetop over medium heat until the sugar is dissolved.

☀️Reduce the heat to low and let the syrup simmer until the liquid is reduced by 1/3.

☀️ Turn the stove off and add the vanilla and salt (the salt is really just to help balance the flavor so be sparing!) Allow the mixture to cool before transferring to a jar.

☀️ The syrup will thicken as it cools. 

I've used this with my cold brew, I've had it with gelato (cold brew flavored) I also have a recipe coming up for caffeinated crème Brûlée.


Oh My Chai Rice Pudding


 

So, it's in the 90s and summertime and I'm over here dreaming of fall. Ok actually what happened is, I delegated the rice making to one of the kids we were to have a cold rice salad, buttttt said child added too much water and the rice was mush.  However, I was dreaming of this chai spice rice pudding so win-win for me! When I learned that I would need to eliminate gluten and dairy from my diet I mourned the loss of desserts.  The first thing I tried to make dairy free was my rice pudding. I'm happy to say it was a success! So today when the rice mush and my chai spice came in, I had to try!

 

Oh my Chai Rice Pudding:  2C cooked and cooled white rice (mushy works) 11/3c  Milk of choice, I used almond1/8 tsp salt1Tsp Java Momma Chai Spice4 Tbsp white sugar 1 Tbsp coconut oil 3 eggs 1 tsp vanilla. Pre-heat oven to 325* Whip eggs with vanilla, sugar chai spice, salt, coconut oil and almond milk. Add the egg mixture to the rice and mix well. Spray a 9x11 baking dish with cooking spray and add the rice mixture. Bake uncovered for 45minutes-1 hour until the pudding is set.

 How do you feel about raisins?

My crew will mutiny if they're in the dish! They aren't bad though! 

Chai Cha Cha Cia Pudding


 

One of the recipes in our detox is for a chia pudding. Gabe (my hubby and glutton for punishment) and I have learned that we actually enjoy this pudding a little. Our recipe is similar to the one I'm sharing today but I needed to find a way to enhance the flavor a bit without adding any sweeteners. Enter the chai milk tea replacement for the coconut milk only in this recipe.

I should note this recipe calls for the only one of 5 fruits allowed in the plan, lemons, limes, grapefruit, green apple or green tipped banana. I can have as many lemons or limes as I would like BUT I can only have 1 of EITHER the apple, banana or grapefruit so the pudding is a welcome indulgence in this pudding the banana is 1/4 of my allowed fruit per day. 

 

The first time I made the pudding this way my kids asked me why my owls tea infuser was drowning in the milk....  they were concerned.... The owl was perfectly fine and did a great job!

I topped this pudding with sliced almonds at home and it was perfect!

Chillin' with Chai Cubes


So here's the deal, this detox thing has me looking for flavor options that can be cool and refreshing.

I went to make my dirty chai cold brew latte one morning and started steeping the milk and I thought to myself, "self" and I knew it was me because I was wearing my own underwear and my kids were calling me mom. And I thought, "self" and a kid said mom and I almost forgot what I was doing.... "Self, what if I were to use this spicy milk tea in other things... I wonder how this would taste as an ice cube in my cold brew hmmm" and that kid that wanted mom started screaming bloody murder because I was lost in thought and not fixing their scrambled egg fast enough. I quickly served them and came up with my plan. (Crisis averted)

After my morning brew was ready (it of course was delicious because... well come on) I made another batch of the milk tea and went to work on my experiment. Since this is the base for several of the next few recipes (maybe all) I wanted to share this recipe first! 

 



 

Dirty Little Chai Latte


I blame this recipe on my oldest daughter. I didn't even want to try a dirty chai but she loves them! So we stopped at our favorite coffee shop on the way to co-op one day and she orders the dirty chai with nut milk and proceeds to tell me to taste it. It was NOT what I was expecting. I usually don't prefer milk in my tea, but I quickly learned that his was not so bad, nope it is great! Well then, Java Momma comes out with a mini cookbook of recipes and lo and behold there's a dirty chai recipe in there. I had to chai it! 

Wait! What makes a chai dirty?

Chai tea is a spicy tea blend and its usually served with milk. 

Dirty Chai is a chai tea with espresso added to it

Dirty chai latte will have steamed milk 

Dirty chai cold brew is made with a cold brew espresso mix.

 

Let’s talk recipe modifications: 

If you want to use chai milk cubes you can skip the milk step and (I would) omit the regular ice cubes.  If you want to make this a full breakfast...add a scoop of your favorite protein powder and add simple syrup if you're not watching your sugars :)

Ever have a something you've been meaning to do take a lot longer than you had planned due to interruptions? You'd think being a mom of 6 I'd be used to this by now but NOOOOO LOL. Equally as frustrating I've been meaning to try different things with Chai. So... I've been playing this week courtesy of Java Momma's Masala Chai Tea (It's my favorite!)

Let me take another step back for a minute. For the last 13 years I've eliminated gluten and dairy from my diet. This past year I figured out I was over-doing it on my sugar intake, so someone went off and introduced me (thank you) to the 21 day sugar detox. 

This detox not only has me eliminate refined sugar but even natural sugars like fruit, honey and maple syrup (which are usually ok for me) as well as sugar substitutes. I will tell you that at times this is HARD but my current secret weapon is chai tea! I love the spiciness! In the next 5 posts I'm going to be sharing my Chai Journey with:

Gluten and Dairy free eating... Just add rice PLUS Felix's Orange Chicken Recipe

 

 

One of the things I'm passionate about is making gluten and dairy free food easy. I realized 10 years ago that my body would not respond well to certain foods in my diet. I'd have headaches, constant exhaustion, phlegm, bloat and excessive gas. I had quickly read a couple of articles about gluten free eating that had piqued my interest, but I wasn't ready to give anything up without a doctor validating the shift.  I had an appointment that week with my endocrinologist and what to my wondering (I know it's wandering but wondering fits better LOL) appear but an article on the wall in his exam room, talking about how my hyper little thyroid would respond better to a gluten free lifestyle. I asked if he thought the article had merit. He said for him the jury was still out, but it couldn't hurt to try. So, I started eating gluten free the following week (10 years ago) 6 weeks after my appointment my thyroid numbers had gone back into normal range and within 18 weeks, I was off my thyroid medicines. In that time frame I had also noticed issues with my stomach that seemed to react to dairy, I thought well, I already cut gluten. Let’s give it a try. I felt a TON better after 2 weeks of no dairy. The change was HARD! I came to find out that there were hidden ingredients in some of my favorite foods. A lot of the potato chips (even the cleaner brands) have preservatives that are either gluten or dairy triggers. Non-dairy isn't always non-dairy... Sometimes it’s just non-lactose so the triggers for some people are still there. My oldest son, Felix eats gluten free with me. We noticed he seemed to react when he had gluten so I had him start eating gluten free along with me. It became our lifestyle. our favorite Asian foods like the cream cheese rangoons and the orange chicken are still sorely missed and while it's gotten better, eating out is still very limiting and nerve racking so we have had to get creative and learn how to make copy cat things for ourselves. 

Enter Copy-Cat Orange Chicken. Felix (My oldest child) learned how to make this and now he gets asked to make it at least once a month! We usually double this recipe and add our favorite Asian vegetables or honey glazed carrots as a side and serve over rice... always over rice!

oh hey about the Liquid Aminos… The original recipe called for soy sauce, but we use Bragg Liquid aminos to stay safe.  There IS gluten free soy sauce available, but I tend to find the aminos more available. The liquid (or coconut) aminos are a great substitute.

So let’s start with that. I’m a Java Momma barista. I make some pretty amazing coffee drinks at home and share my recipes with my followers so they can enjoy better brews at home. 

I LOVE the fresh smooth taste of our air roasted coffee . It’s smoother than most brands out there. And I love the variety we have too! 

I fell in love with this company when I was an independent boutique owner. I wanted to add something to my offering that wasn’t fashion related, but was related to my personal style. My friend shared about an amazing opportunity and I jumped. I really joined for the discount and to be able to throw samples in my mystery bags, but I struggled with that business after the birth of child #6. Between homeschooling, health and life in general, that business needed more than I was interested in offering. I was burning the candle at both ends and going NOWHERE. 

Now, both my husband and I are born and raised in Southern California. While I dream of a small town life we struggle with the idea of picking up and moving, but life here is costly! My husband works hard between his full time job as a computer something or other with one of the navy contractors and his part time job as tech guy for our church, he’s spent and the bills just keep coming. I wanted to create something that would bring me fun money and fund my Java habit and I had this Barista gig in the sidelines, so in March 2022 I closed my boutique and made JavaMomma my main jam. I have had a BLAST dreaming up recipes and throwing parties and all the things while sipping the worlds best coffee. I love matching people’s favorite flavors to their new favorite cup of coffee.
